Preheat the oven to 425°F (220°C) or preheat your air fryer to 390°F (200°C).
Drain, rinse and dry the jackfruit. Remove the tough core pieces if desired, then pull the jackfruit into bite-sized chunks.
Toss the jackfruit with olive oil, garlic powder, onion powder, smoked paprika, salt and black pepper. Let it rest for 10 minutes.
In one bowl, whisk together the flour, cornstarch, baking powder, paprika, garlic powder, onion powder and salt.
Pour the plant-based milk into a separate bowl.
Dip each jackfruit piece into the milk, then coat in the flour mixture. Repeat for a second coating for extra crispiness.
Arrange the coated pieces on a parchment-lined baking tray or in the air fryer basket in a single layer.
Bake for 30–35 minutes, flipping halfway through, or air fry for 14–16 minutes, shaking the basket halfway through cooking.
Mix the Buffalo sauce, melted vegan butter and maple syrup.
Toss the hot crispy jackfruit wings in the sauce until evenly coated.
Serve immediately with vegan ranch, celery sticks and carrot sticks.
